
In our exclusive, scenic restaurant, Volvoreta, you can savour the top Mediterranean cuisine with signature touches as you enjoy spectacular views over the mountains of Madrid.
Located on the 30th floor, since it opened it has become a gourmet benchmark in Madrid. Its name, which means ‘butterfly’ in Galician, pays tribute to the red butterflies that flutter over the ceiling of the restaurant in the work of artist Nina Boy (Xavi Muñoz), made up of two large canvases suspended at each end of the restaurant. Hundreds of red frosted butterflies seem to be travelling from one panel to the other, flying over much of the hall and conferring a touch of colour to the restaurant’s elegant decor.
Its gourmet cuisine combines traditional cooking using seasonal products and is accompanied by a painstakingly chosen wine list that includes the leading Spanish appellations of origin and prominent international labels.
The gastronomic excellence is enhanced by interior design based on boldly groundbreaking lines which highlight the impressive verticality of the space. Lacquer, granite and primarily black and white furniture result in a highly sophisticated atmosphere that frames the scenic views over the city, turning Volvoreta into a true lookout point over Madrid.
Likewise, two large murals made of silkscreened glass and a delicate black and white drawing separate the central area from the sections on the side. Friday nights feature our Musical Moments, in which a harpist will provide entertainment with live music. The restaurant has an exclusive area set aside seating up to 15 people.

Summer, winter, spring, autumn... Each season has its own moments, its own unique features; each time of the year arouses very different sensations. Volvoreta’s menu is based on this principle. Because we’re not the same in January as in August, and because we do not fancy the same things in March as we do in October, we offer seasonal menus that include a wide variety of delectable dishes appropriate for each time of year. Our expert kitchen team makes a painstaking selection of products and dishes that will capture your attention with their outstanding quality and originality.

Five days, five proposals. For a reasonable price, you can savour the best of our cuisine during a business meeting or in the company of a friend as you enjoy our restaurant’s magical setting. Outreach Lunches were created with the goal of bringing Volvoreta’s cuisine to diners who are not yet familiar with our menus.

Iván Sánchez is one of the top Basque cooks around.
He took over the reins of Volvoreta after having worked in the most glorified shrines to Basque cuisine, including Arzak restaurant and Martín Berasategui’s Kursaal restaurant.

Our wine list is a reflection of the colour, scent and flavour of the great Spanish and international wines.
With more than 250 labels to please even the most discerning palates, you will find traditional wines, modern wines and even mythical wines, all to be savoured as you enjoy a pleasant lunch with family or friends, a business lunch or a dinner overlooking the sky of Madrid, in an elegant, welcoming atmosphere.

The sommelier at the Eurostars Madrid Tower,
Pilar Rodríguez, became an expert in crafting wines and other beverages at the Wine School. She is also certified as a sommelier by the Chamber of Commerce of Andalusia.
She served as the sommelier at Urrechu Restaurant in Pozuelo de Alarcón and was a
member of the Tasting Committee for the Gourmet Guide. In 2007 the Regulatory Council of La Mancha awarded her a prize in recognition of her professionalism.
